Many people should have been stuck by fish bones when they were young, thus feeling both love and hate for delicious fish until one day you will find… not all fish have so many thorns!
Fish is so delicious and nutritious, but there are too many varieties. In particular, river fish and marine fish have different tastes, mouthfeel and nutrition. Which is better to eat?
Dr. Clove will help you analyze it.
More DHA in marine fish, more brain-nourishing?
I don’t know why, when talking about marine fish, everyone will think that it is rich in DHA and better in nutrition than river fish.
Not really.
To evaluate the DHA content of a certain fish, two indexes should be considered:
- Fish fat content. The fat content of fish varies from species to species. For example, the fat content of carp is 4.1%, while that of cod is only 0.5%. DHA content in fat. The DHA content in marine fish fat is generally slightly higher than that in freshwater fish, but it is only [slightly higher].
Therefore, DHA content mainly depends on species and has nothing to do with whether it is marine fish or river fish.
Dr. Clove recommended that the DHA content of silver carp, silver carp and perch in freshwater fish is very good. Hairtail, yellow croaker, moray eel, sardine and salmon among marine fish are also good choices for supplementing DHA.
Marine fish have fewer parasites?
Many people think that marine fish live in the deep sea, with primitive and hard living conditions and salty sea water. Should there be few parasites and bacteria? Japanese often eat sashimi, doesn’t it mean marine fish are safer?
The answer is still: no. The parasites of marine fish and freshwater fish are basically the same, and marine fish are also at risk of parasite infection.
As for [sashimi], in fact, most of them have been heated or frozen (yes, the temperature is low enough for parasites to freeze to death), instead of being fished out and eaten.
When cooking in one’s own home, one must cook before eating.
More heavy metals in river fish?
-That…… the waters where river fish live look dirty, should there be more heavy metals than marine fish?
Not really.
Fish have a strong enrichment effect on mercury, arsenic, lead and other heavy metals, especially fish at the higher end of the food chain. Judging from the data, the heavy metals in marine fish are actually higher than those in river fish.
For example, mackerel, shark, square head fish, blue marlin, sailfish, big-eyed tuna and tilapia are all marine fish with high mercury content that should be eaten less.
However, river fish are not particularly safe, and the quality of water quality does have a great impact on it.
Will malachite green be added to raising river fish?
Malachite green is a kind of fungicide, insecticide and fungicide with low price and excellent effect, but it has potential carcinogenicity.
China has banned the use of malachite green since 2002. However, Dr. Clove has to admit that there are indeed some unscrupulous farmers who commit crimes against the wind and have repeatedly banned them. In the 2015 Shaanxi Province freshwater fish safety survey, malachite green was detected in the market at a rate of about 7.32%.
Therefore, freshwater fish should be purchased in large supermarkets or markets with good monitoring systems as far as possible.
Which is better, marine fish and river fish?
If we compare them from three aspects: safety, nutrition and delicious taste:
- Marine fish: Generally, the thorns are few and the meat quality is delicious, but it may not be fresh enough (refrigerated transportation is required in most areas), and there may be problems of excessive heavy metal mercury and Vibrio haemolyticus contamination. River fish: the meat quality is not compact enough, but fresh (it can be killed and eaten now); However, the feeding environment is very important, and there is a risk that organophosphorus and other pesticides exceed the standard and malachite green is illegally added.
The conclusion is: each has its own advantages and disadvantages, listen to the wallet.
-It feels… it’s not very safe, can I not eat fish?
-It is no good to stop eating because of choking.
And we Chinese, eating fish is really very, very not enough!
The survey of nutrition and health status in China from 2010 to 2012 showed that the daily intake of fish and shrimp in China was only 23.7 g, far lower than the 40 ~ 75 g per day and 280 ~ 525 g per week recommended in the dietary guidelines.
Although there are some safety problems in fish, the products are relatively safe in the formal aquatic product market.
Moreover, fish contains more protein and polyunsaturated fatty acids, which is far more beneficial to our health than harmful. There is no need to worry about choosing the right variety and controlling the frequency. Dr. Clove has two small suggestions:
- It is best to eat fish 2-3 times a week, and try to avoid high-mercury fish, marine fish and freshwater fish. Try to choose the way of boiling and steaming, fry and braise in soy sauce in what, and occasionally relieve your appetite.
